INGREDIENTS:
Vegetables of your choice, chopped (seriously take your pick and get creative!)
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 2 tablespoons honey
- 2 tablespoons melted butter
- Salt to taste
INSTRUCTIONS:
- Preheat oven to 425 degrees.
- Line a sheet pan with parchment paper or a silicone baking mat.
- In a large bowl, toss your chopped vegetables with olive oil and seasonings.
- Spread the vegetables evenly across a sheet pan and roast for 20 minutes.
- In a small bowl, whisk together honey, butter and salt.
- Remove vegetables from the oven and drizzle on honey-butter mixture. Return vegetables to the oven and bake for additional five minutes.
- Remove from the oven. Let cool, and enjoy!
