PHILLY CHEESESTEAK DIP

  • 1 cup chopped yellow onion
  • 1 cup chopped green bell pepper
  • 1/2 cup zesty Italian dressing
  • 1 (8 oz.) block of cream cheese, softened
  • 1/4 cup 2 percent Greek yogurt
  • 1/2 pound white American cheese slices, chopped (Land O’Lakes from the supermarket deli recommended)
  • 1/2 pound sliced roast beef, chopped
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Sliced French bread or tortilla chips

Move oven rack to middle position and preheat to 350 degrees. Lightly spray 8-inch square baking dish with nonstick cooking spray; set aside. In a large skillet over medium heat add onion, pepper and Italian dressing. Cook, stirring frequently, until onions become translucent and soften, about 5 minutes. Add cream cheese to pan and use back of a wooden spoon to break it into chunks. Once cream cheese starts to melt, add Greek yogurt and American cheese. Stir constantly until all the cheese melts. Turn heat off and stir in chopped roast beef. Season with salt and pepper. Pour mixture into prepared baking dish. Bake for 15 minutes, sprinkle with Parmesan cheese, then bake for 10 more minutes, or until the edges are bubbly. Serve with sliced French bread and tortilla chips.

SLOW COOKER LITTLE SMOKIES

  • 4 14 oz. packages of cocktail sausages
  • 16 to 18 oz. bottle of honey-flavored barbecue sauce
  • 1/2 cup light brown sugar
  • 1/4 cup white vinegar
  • 1 12 oz. bottle of lager beer

Place the sausages in the bowl of a slow cooker. Add the barbecue sauce, brown sugar, vinegar and beer and stir to combine. Cook on high for 2 to 3 hours or until the sausages are warmed through. Lower heat and keep warm to serve.

BUFFALO CHICKEN TORTILLA ROLL UPS

  • 2 cups shredded cooked chicken
  • 1 (8 oz.) block of light cream cheese, softened
  • 1/2 cup Buffalo wings sauce
  • 1/4 cup blue cheese, crumbled
  • 1 cup cheddar cheese, shredded
  • 2 Tbsp. sour cream
  • 4 (6-inch) large flour tortillas
  • 2 to 3 green onions, thinly sliced

In a mixing bowl combine the blue cheese, cream cheese, sour cream and the cheddar cheese. Add chicken with 1/2 cup Buffalo wings sauce. Lay a tortilla out on a plate and spread an even layer of the chicken and cheese mixture all the way to the edges (about 2 to 3 Tbsp.). Roll up tortilla tightly and place on a plate and then repeat until all the ingredients have been used. Chill for 2 hours in refrigerator. Slice the ends off of each rolled tortillas and set aside. Garnish with sliced green onion.

Note: Make sure tortillas are at room temperature before you roll them so they are nice and flexible. Yield: 35-40

HOT SAUSAGE BEER CHEESE DIP

  • 1 (16 oz.) roll hot breakfast sausage
  • 4 cups shredded sharp cheddar cheese
  • 1 cup beer
  • 2 (8 oz.) blocks of low-fat cream cheese
  • 1/4 tsp. garlic powder
  • 1/4 cup diced green onion
  • Chips, bread or vegetables for serving

Preheat oven to 350 degrees. In a skillet over medium heat, cook sausage until browned and no longer pink. While cooking, break the sausage up into crumbles. Place 2 cups cheddar cheese, cream cheese, garlic powder and beer in a food processor or blender. Mix until well combined. Pour the mixture into a large bowl and add cooked sausage and the remaining 2 cups of cheddar cheese. Mix until combined. Place mixture into an oven safe dish and bake for 15 to 20 minutes. Remove from oven and sprinkle with diced green onion and serve with chips, bread or vegetables. Serves: 6-8

SALTED CARAMEL BROWNIES

  • 1 cup butter
  • 4 oz. semi-sweet chocolate
  • 2 cups sugar
  • 4 eggs
  • 1 1/2 cups flour
  • 1/3 cup cocoa powder
  • 1/2 tsp. salt
  • 1/2 cup semi-sweet chocolate chips
  • Approx. 10 oz. caramel sauce
  • Coarse sea salt

Preheat oven to 350 degrees. Lightly grease a 9×9 baking dish. Melt together the butter and the semi sweet chocolate. Let cool slightly. Stir in the sugar and the eggs. Mix in the flour, cocoa powder and salt. Fold in the chocolate chips. Spread the batter in the prepared baking dish. Bake for 30-35 minutes until a toothpick inserted comes out mostly clean. Let cool completely before topping with caramel sauce and sprinkling with sea salt. Yield: 9
