VANILLA CRANBERRY MIMOSA

STRAWBERRY BELLINIS
2 cups frozen strawberries
1 cup water
2 Tbsp. granulated sugar
Chilled champagne (or sparkling moscato)
Fresh strawberries to garnish (optional)
Combine the strawberries, water and sugar in a medium saucepan over low heat. Bring to a boil. To make a clearer syrup, remove the strawberries, and allow the syrup to cool completely.
Otherwise, break up the strawberries with a fork and allow the syrup to boil for about three minutes over low heat, stirring often. Transfer to a blender, blend, and strain through a mesh strainer.
For a cleaner syrup, strain through a cheesecloth. Allow the syrup to cool completely.
Pour a small amount of strawberry syrup in the bottom of a champagne flute and fill with champagne.

BLOOD ORANGE CHAMPAGNE MULE
Juice of 1/2 a medium blood orange
Juice of 1/2 a lime
1 ounce vodka
8 leaves of mint
2 ounces chilled ginger beer
Chilled champagne for topping
In a glass, combine the blood orange juice, lime juice and vodka.
Add the ginger beer and top with the champagne. Garnish with blood orange slices and fresh mint.

RASPBERRY LIMONCELLO PROSECCO
3 cups prosecco, chilled
1 cup limoncello liqueur, chilled
1 cup frozen raspberries
6 sprigs of fresh mint
In a large pitcher, whisk together prosecco and limoncello. Serve over raspberries, garnished with mint, if desired.
